The creamy crockpot chicken recipe from [livejournal.com profile] renniemom was a *huge* success at dinner last night. Fiona Pie was even licking her bowl! We had [livejournal.com profile] diermuid and his daughter over for dinner and there was still a serving for me to refrigerate for a leftover lunch soon. When it's just the four of us, there might be enough left over to freeze for another dinner entirely. We'll have to see about that.

Some folks had it with egg noodles; others had it with brown rice. We munched on grape tomatoes as we were setting the table, and there was steamed broccoli served on the side. Kira Deara pronounced it her "favorite recipe of yours, Mom." A win all around! THANK YOU.

In other excellent news, my size 10 jeans are sort of saggin' on me today.

Eeeugh, I hear that. Due to the peculiarities of my shape, I almost always *have* to wear junior's sizes. "Proper grown-up" (misses) sizes seem to make this assumption of the butt and hips being significantly larger than the waist, and that just ain't true.

Yeah. I haven't really *lost* much weight this summer -- sort of on a plateau with the same 6-10 pounds over the last few months. It's so odd! I mean, I my wedding dress was a size 8/10 and that was when I weighed about 30 pounds less than I do now. ::shrug::

3-5 boneless, skinless chicken breasts
1 can cream of something soup
1 8-oz. block cream cheese
1 packet of Italian dressing dry seasoning mix

The way I did it used Cream of Chicken with Herbs soup; all-fat cream cheese; and the not-zesty version of Italian dressing dry mix. I've heard you can use low-fat cream cheese, but NOT non-fat cream cheese. I also used not-frozen chicken, but I've heard you can use frozen ones just as easily.

I schmeared the creamy soup at the bottom of the crockpot and then laid the chicken breasts on top of it. I broke the cream cheese up into a few chunks and plopped it on toppa the chicken, and then sprinkled the dressing over all of it. Set on low for 8 hours.

That was at about 8:30 a.m. It cooked and then sort of sat until, I don't know, maybe 5:30 p.m.? Then, [profile] diermuid fork-shredded the chicken and mixed it all back together. Half the dinner-eaters ate not long after that; the rest of us ate at about 7 p.m. The mixture stayed warm and happy the whole time.
