Got FionaPie's test results back from the doctor's office: evidence of definite gluten sensitivities but not full-blown celiac disease, and no nutritional deficiencies detected. So good news on both fronts! He says to keep on with the dietary changes that remove gluten from the equation, since not being in pain is a good thing, but at least now we know we don't have the fret about any extra tests or medicines/supplements. Also, she's regained a pound in the last week, so I think she had started to lose some weight, there.

Discoveries: gluten-free bread isn't bad, but if one has a "hey, this should taste like bread" thought in one's head, then it tastes kinda wrong. Don't know if that makes any sense. Toasted is definitely better -- thanks, [livejournal.com profile] zylch, for that note. Better yet is the Bob's Red Mill gluten-free mix for the bread machine, which smelled great last night. There are a number of reasons -- nutritional, logistical, and financial -- why we can't purchase GF versions of everything in our kitchen, but the bread thing will make it simpler for her to pack lunches and not worry about whatever the school is serving on a given day.

Exactly this when trying meat-free products. If one enters the experience with the hopes of the product tasting/texturing like the meat it is marketed as, one will be disappointed.

Except for Quorn. Quorn is kind of creepy that way. And Morningstar Farms corn dogs, but that might say more about a 'normal' hot dog's lack of connection to real meat than it does about how closely MF was able to mimic meat.

Wonderful! I'm glad you guys are getting answers, and that her problems should be pretty easy to work around. I'd forgotten that y'all have a bread machine, but I bet that'll help keep the cost down.

Is Fi much of a cake person for birthdays? I know she's got one coming up in a bit, and one of my housemates has figured out how to hack box gf cake mix to make it amazingly moist and tender (like the bread, gf cakes tend to be on the drier and crumblier side). I can ask her for the details of what she does, if it'd be useful information for you.

Princess reminded me of something earlier today -- corn tortillas are gluten free, and pretty useful for making wraps, roll-ups, or taco-like things filled with whatever to pack for lunch when sandwiches get boring.

Corn tortillas *can be* gluten-free, but not all of them actually ARE. We learned that when we nearly purchased a package of those at the grocery store and saw "enriched wheat flour" in the list of ingredients. Party FOUL.

Foul indeed! I hadn't even thought of that possibility, since we live in a 50%+ Spanish-speaking neighborhood. The tortillas here are old-school, just corn or just wheat.
