Saturday Night Fun
With the days getting shorter and cooler, I want to bake more...and this week, I wanted do something a little bit fun. An unprecedented number of bananas were all over-ripe at the same time that I *had* some time to spare, so I took advantage of the opportunity for a pseudo-scientific "taste test" of two different banana bread recipes. One was from
agrnmn's Grandma Coletta and the other was recently shared by
katzenfrau.
There wasn't a lot of variation in the recipes. Both used about a cup of mashed banana, a cup of granulated sugar, and two cups of flour, as well as a bit of baking powder, baking soda, and a pinch or so of salt. I didn't have two identical pans, so one cooked in a glass dish and one cooked in a metal dish, but I don't think I expected them to look SO DIFFERENT! I'm glad

Here's where they varied: Bread A (on the right) used margarine, one egge, and cooked at 350 degrees for about 55 minutes. Bread B (on the left) used butter, two eggs and cooked at 325 or about 70 minutes. Testers said A was lighter and "smelled more banana-y." B was judged to taste moister and more "like cake." While the winner, indicated by the number of Lego voting tokens, is pretty clear, I don't think either one of these will last a full 24 hours on the counter. I'm glad they were all willing to play along!

All zucchini bread, on the other hand, is not necessarily good zucchini bread.
