Making more progress on the Christmas gift cookie-baking. What I like about the phased approach of doing one or two sorts each week is that it keeps anything from being too overwhelming, and it also means the family has some Christmas cookies as treats for a couple of weeks leading up to the holiday, ALSO without that task being overwhelming.
Now...whereas the hot cocoa mix is the gift for kids to give to the local folks on their lists, these cookie bundles are what
diermuid and I give to our adult friends and their families. So we try to make sure there are enough to delight 5-6 people at once, plus a few extra for our kids to munch on as we go. I have a lot of trouble finding the right balance with that stuff, but it's all fun and tasty, so I try not to fret. Much.
Yesterday, two of the kids worked together on the chocolate-dipped pretzels. Easy-peasy for them, and for me to sit back and watch them. Into the freezer those suckers went. Today is peanut butter cupcakes (the tiny kind, with Hershey's Kisses on top). Thinking myself clever, I doubled the recipe. Go ahead. Laugh. I'll wait.

At this point, I'm up to approximately 150 tiny peanut butter cupcakes -- WAY MORE than I need, even accounting for family snackage. We'll probably run out of cupcake liners first. Or maybe the Hershey's Kisses. And no way will I have enough cooling racks or horizontal surfaces safe from the dogs. I despair of seeing the bottom of the batter. Did I mention I don't even like these suckers? Yeah.
ETA: I'm complaining a bit, but I'm smiling too. This is about the closest I tend to get to Risk, Adventure, and Spontaneity. Having a blast. :)
FIN: The last batch is going in the oven. I ran out of cupcake liners, Kisses, and batter at the same time. WIN.
